cleaned (appx. 5-6 pumpkins)<\/p>\n<p>2 apples, diced<\/p>\n<p>1 onion, diced<\/p>\n<p>7 cups of chicken stock<\/p>\n<p>1 cup of apple cider<\/p>\n<p>1 tsp each, ground: cumin, nutmeg<\/p>\n<p>1\/2 tsp each, ground: cardamom, clove, ginger, cinnamon, pepper<\/p>\n<p>1 cup cream<\/p>\n<p>Cr\u00e8me fresh.<\/p>\n<p>Begin by halving your pumpkins.\u00a0 Kuri pumpkins are small, but very hard to cut according to our sources.\u00a0 (Apparently our sources didn\u2019t have a good Chinese cleaver.)<\/p>\n<p><a href=\"http:\/\/lh4.ggpht.com\/_TrsUO20TelM\/TMS4Fyb0zUI\/AAAAAAAAABw\/PWDKLwtfGgo\/s1600-h\/IMG_2541a%5B3%5D.jpg\"><img loading=\"lazy\" decoding=\"async\" title=\"IMG_2541a\" border=\"0\" alt=\"IMG_2541a\" src=\"http:\/\/lh4.ggpht.com\/_TrsUO20TelM\/TMS4HgxlBoI\/AAAAAAAAAB0\/H9UlHSR9s_8\/IMG_2541a_thumb.jpg?imgmax=800\" width=\"244\" height=\"194\" \/><\/a><\/p>\n<p>Baste the halves with olive oil, season with salt and pepper, then bake at 350 for about 60-90 minutes \u2013 basically until they\u2019re done.\u00a0 Check on them every 15-20 minutes after 45.\u00a0 When ready, pull the pumpkins from the oven and set them aside.<\/p>\n<p>While the pumpkins cool so that you can touch them, dice the onion and apples, and measure out your spices.\u00a0 When you can handle the pumpkins, scoop out the flesh into a stock pot.\u00a0 Add the other ingredients and boil them on medium to medium-high (you know your stove better than I) for an hour or so, until the flavors are starting to come together.<\/p>\n<p><a href=\"http:\/\/lh4.ggpht.com\/_TrsUO20TelM\/TMS4IyIgkJI\/AAAAAAAAAB4\/s6DYb82-rpg\/s1600-h\/IMG_2543%5B3%5D.jpg\"><img loading=\"lazy\" decoding=\"async\" title=\"IMG_2543\" border=\"0\" alt=\"IMG_2543\" src=\"http:\/\/lh5.ggpht.com\/_TrsUO20TelM\/TMS4JQ6PQhI\/AAAAAAAAAB8\/R8f--YrHGYM\/IMG_2543_thumb.jpg?imgmax=800\" width=\"244\" height=\"184\" \/><\/a><\/p>\n<p>It won\u2019t be quite right yet.\u00a0 Don\u2019t worry.\u00a0 Puree the soup in a food processor or with a boat motor, whichever you prefer.\u00a0 The flavor should be coming together now.\u00a0 Allow to cook until you\u2019re ready to serve, then add the cream.<\/p>\n<p>Serve with a dollop of cr\u00e8me fresh \u2026 or sour cream if you\u2019re poor like us.<\/p>\n<p>We served ours with a loaf for farl bread, from Paul Hollywood\u2019s \u201c100 Great Breads\u201d (p.31).<\/p>\n<p><a href=\"http:\/\/lh6.ggpht.com\/_TrsUO20TelM\/TMS4LNbl2PI\/AAAAAAAAACA\/9gmxJcerL5k\/s1600-h\/IMG_2546%5B3%5D.jpg\"><img loading=\"lazy\" decoding=\"async\" title=\"IMG_2546\" border=\"0\" alt=\"IMG_2546\" src=\"http:\/\/lh5.ggpht.com\/_TrsUO20TelM\/TMS4MlGuk7I\/AAAAAAAAACE\/ccmxz5Fu21I\/IMG_2546_thumb.jpg?imgmax=800\" width=\"244\" height=\"184\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This recipe was invented spontaneously, after reading half a dozen recipes.\u00a0 The pumpkin we used also has a French name, which translates as \u201cwalnut pumpkin\u201d, but I can\u2019t find a reference at the moment. 6 lbs kuri pumpkin, halved &amp;
