3 cups dark red kidney beans (~1.5 lbs)
4 cups rice
1.5 lbs Cajun sausage
3 lbs small onions
4 sticks celery
1 clove elephant garlic
1 bell peppers
1 jalapeño
3 bay leaves
2 tbs paprika
1 tsp pepper
1 tsp sea salt
1 tsp worcestershire sauce
1 tsp habanero hot sauce
Directions
(Grossly oversimplified, use your favorite search engine as needed)
Soak and cook beans. Finely dice all vegetables. When ready and add the sausage, vegetables, herbs, spices, and sauce. Cook for one hour while you prepare the rice.
Serve with beer and corn bread at a 1.5:1 rice to bean goo ratio.
